Home made burgers with barbecue sauce

No barbecue party can go without: good, juicy burgers packed with flavour accompanied by home made sweet and spicy barbecue sauce. But it’s also a welcome treat after a day at work; just add a few potatoes and green beans for a complete meal.

Serves 4

For the sauce:

4 tbsp Vinegar
125 ml. Water
1/2 Onion, chopped finely
3 tbsp Lemon juice
2 tbsp Brown sugar
1/2 tbsp Mustard
4 tbsp Vegetable oil (sunflower oil works just fine)
Good amount of ground black pepper
Big pinch of salt (approx. 1 tsp)
Pinch of chili powder

8 tbsp Ketchup
2 tbsp Worcestershire sauce

For the burgers:

250 gr. Ground Beef
1 Egg
2 tsp Salt
2 heaped tsp Coriander powder
1 heaped tsp Mace powder
2 heaped tsp Cumin powder
Pinch of Chili powder
Big bunch of fresh Parsley, chopped
1/2 Onion, finely chopped (optional)

For the sauce:

– Add all the ingredients, except the ketchup and Worcestershire sauce, to a pan and mix well. Bring to a boil then turn the heat down and let it simmer and reduce for 15-20 minutes.

– Then add the ketchup and  Worcestershire sauce. Bring to a boil again, then turn off the heat and let it cool. The sauce can be made well in advance and will keep for a few days in the fridge.

For the burgers:

– Put all the herbs and spices, and onion if using, in a large bowl and crack the egg over it. Whisk the egg well with all the herbs. Add the ground beef and a bit of breadcrumbs and mix with your hands. If the mixture feels wet and it won’t stick to become a ball; add a bit more breadcrumbs.
TIP: if you’ve put in a bit too much crumbs or the mixture is a bit dry; add a tablespoon of milk to the mixture.

– Make 4 even sized burgers.

– Heat some butter to a frying pan, when it starts to brown you’ll add the burgers. Bake for 2 minutes on medium heat. Then turn them around and bake on a low heat for 10 min. After that, turn one last time for 3-4 minutes and you’ll get a perfectly baked juicy burger.

The burgers can of course also be grilled on the barbecue for an extra smokey flavour.

The spice mix for your burgers can easily be adjusted to your own taste. Try adding paprika powder, Italian herbs or the easiest option of ready made hamburger/meat ball- mixtures.
