Mayonnaise is something most people have in their fridge and eat on a regular base without ever thinking of making it themselves. But it’s easy and quick, though it requires a bit of elbow grease if you try it by hand. It’s worth the work out though. And once you’ve mastered the basic mayonnaise, the experimenting can begin!
Makes about 300 ml.
Ingredients (for a basic mayonnaise)
2 Egg Yolks (fresh as possible)
1 tbsp Vinegar
1 tsp Mustard
250 ml. Sunflower Oil
Salt and pepper
– Put the egg yolks, vinegar and mustard in a bowl and mix well.
TIP: Make sure all the ingredients, including the oil, are at room temperature. This prevents it from splitting.
– Take a whisk and start whisking while adding the oil drop by drop.
TIP: Add the oil very slowly. Wait with the next bit of oil until the last one it fully absorbed in the sauce.
– Once the mayonnaise starts to thicken you can add the oil a bit more quickly. After all the oil is added, whisk for another minute.
– Add salt and pepper to taste.
TIP: Even the best chefs have had mayonnaise that has split. Don’t worry if it happens to you, there are enough ways to rectify and save your sauce. Once your sauce has split, add another egg yolk and whisk it back to a smooth sauce. You could also try adding a tablespoon of warm water or a tablespoon of lemon juice.
Curry mayonnaise: add 1 tsp of curry powder and a squeeze of lemon juice to the basic mayonnaise.
Spicy mayonnaise: add 1 tsp of paprika powder and 1/2 tsp of chili powder to the basic mayonnaise.
Fresh mayonnaise: add a few sprigs of chopped chives and 2 tbsp of crème fraîche or yogurt to the basic mayonnaise.
Remoulade sauce: add (all finely chopped) 2 gherkins, 1 tbsp of capers, 1 tbsp fresh parsley, 1 tbsp fresh chives, 1 tbsp fresh chervil, 1 tbsp fresh tarragon.
Aioli: add 4 cloves of pressed garlic in the first stage to the egg yolks. Replace half (125 ml.) of sunflower oil for olive oil. Prepare in the same way as the basic mayonnaise.
Mackerel mayonnaise: make the basic mayonnaise and add 1 tbsp of chopped chives, 1 chopped spring onion, 1 tbsp of chopped capers, 250 gr. smoked mackerel and 1 tbsp of lemon juice. Great on toast or in a club sandwich.
