Korean style dinner

Korean food is probably not the first cuisine you think about when planning a dinner, but it is actually quite versatile with lots of Banchan (side dishes). There is meat, fish, tofu, many different vegetable dishes and delicious sauces. I made a very basic dinner inspired by this cuisine with a bit of everything.

As I did with the Rijsttafel, I will also cut this up into a few separate posts. This way the recipes will hopefully stay readable and clear. All the recipes can be found in the category taps Dinner — Korean Dinner.

My dinner consists of:

– A big bowl of plain white rice.
– Marinaded and grilled chicken.
– A quick cucumber Kimchi.
– Gyeran Malyee, a rolled omelet.
– Gamja Jorin, potatoes with a sweet marinade.
– 4 different quick sauces.

In this post I will start with the recipes for the sauces.

SIMPLE SOY DIP

Simple dipping sauce for chicken or fish.

Ingredients

4 tbsp Soy sauce
1/2 tbsp Vinegar
1/2 tbsp Sesame seeds (which I didn’t use, due to allergies)

Preparation

– Mix all the ingredients well.

UPGRADED SOY DIP

This dip takes a tiny bit of extra work but it is worth it. Tastes great with meat, chicken and rice dishes.

Ingredients

4 tbsp Soy sauce
1/2 tbsp Vinegar
1/2 tbsp Lime juice
1/4 tsp Chili powder
1 tsp Brown sugar
1 cm fresh Ginger, grated

Preparation

– Mix all the ingredients well.

SIMPLE LIME SAUCE

Refreshing sauce which is great with rice and fish dishes. The sauce is originally from the Philippines, but works well with this dinner.

Ingredients

4 tbsp Fish Sauce
2 fresh Kalamansi- limes (if not available, a regular lime would do, but the taste will be different)

Preparation

– Squeeze the limes and mix the juice with the fish sauce.

The sauce can be kept in the fridge for about 2 days.

UPGRADED LIME SAUCE

A few more ingredients and tons of extra flavour. Goes well with fish and rice.

Ingredients

4 tbsp Fish Sauce
2 fresh Kalamansi- limes (if not available, a regular lime would do, but the taste will be different)
1 cm fresh Ginger, grated
Pinch of chili powder

Preparation

– Mix all the ingredients well.
