Soups can be so extremely simple. This recipe is pure, simple, full of class and flavour. It can be served as an entree or together with some home made bread it would do as a light dinner. And if you have the time and energy, you could make it even more special by making your own pasta!
Serves 2-4 (entree or dinner)
350 ml Fond (concentrated stock, game or meat)
1 Stock cube (game or meat)
300 ml Water
250 gr. fresh Tortellini (I used mega size, shop-bought with spinach-ricotta filling. Any other will do)
Few leaves of Parsley
– Add the fond and water to a pan and bring to the boil.
– Add the stock cube to the pan and make sure it dissolves well.
– Add the tortellini to the pan and boil for 3-6 minutes, or longer according to package instructions.
– Season to taste with salt and pepper.
Serve the broth with the pasta, finely chopped parsley and a few pieces of bread.
